Review: I really enjoy these, but they aren't quite as universal as the packaging would lead you to believe. Firstly, when you open a package of konjac noodles, there's a distinct fishy smell - this is a result of the konjac additive combined with being stored in an airtight package. I open them directly into a strainer in the sink and rinse with tap water for a good 30 seconds. This gets rids of most of the smell. After they've drained for a minute, I'll toss them in a microwave-save bowl and microwave them for a couple of minutes. This gets rid of any remaining odor and firms them up ever so slightly. At this point, I put them in the dish. As to what you can use them with: they're a little chewy and I personally do not care for them as a replacement for any wheat noodles in tomato dishes - that is to say, basically no tomato or cheese sauces. They are really good (in my opinion) as a replacement in almost any dish where you'd use a rice noodle, or occasionally as a replacement for a ramen-like noodle in a soup. My go-to is to mix together peppers, garlic, soy sauce and PB2 as a quick cheater satay, toss the noodles to cover, and put it in the fridge until cold. Eat it on top of a bed of greens for a good, filling meal of around a hundred calories.
