The short grain Selenio rice variety used for Organic Brown Sushi Rice has characteristics very similar to the Japonica rice that is used to make sushi in Japan. It is organically grown in the Piemonte region of northwest Italy, an area also renowned for the cultivation of risotto rice. Review: I tried to make sushi and maki with this rice thinking it was a healthier option. The only problem is that the rice does not stick together, so it is not ideal for sushi or maki. Perhaps, I should put much more water. I will try this next time, but if this was the reason why the grains would not stick together, I think we need a lot more water than with white rice. The vinegar did not help stick the grains together either. Overall though, I am still happy with this product because I wanted to have a healthier alternative to white rice.
