Review: The first time I tried a gluten-free bake. I made Jamaican Coco Bread, and noticed during the proofing stage that there was not much rise. The dough was very sticky and had a biscuit dough consistency. There was no elasticity to the dough at all, which I understand is what gluten creates in a bread dough. I remained optimistic, but once the bread baked, they remained flat, and dense. They looked completely different from how they should look, not light, airy or fluffy. The taste was different and gritty, like a rough cornmeal. This flour was very disappointing!
